The overwhelming evidence that plant-based diets are ideal for our bodies, our communities and our planet means that more than ever, at-home and professional chefs are substituting or supplementing their menus with all things vegetarian and vegan. But shifting what’s on your plate doesn’t mean reinventing your lifestyle or applying an all-or-nothing approach: seasonal, plant-based cooking can be an easy, fun, and delicious way to diversify your diet, even if you’re not interested in going to the greens full time. We’ll talk about the health benefits of plant-based cuisine, how to tap top farmers and purveyors locally and sustainably, how a nose-to-tail chef shifted to fully vegan after 40 years of meat-based cooking and top it off with a cooking demo of easy-to-prepare, seasonally-driven dishes that will delight food lovers of any inclination.
